Q: What does potatolicious mean?
A: According to the Urban Dictionary, potatolicious is a way to describe something that is extremely good. In my world, that's potatoes and those who eat them.
Q: So, will this blog be all potato recipes?
A: Not necessarily so. You see, I’m a wife and mother of 3, trying to fix delicious, fat-free plant-based foods for my family. There will be potato recipes, for sure, but you can count on the recipes being starch-based, vegetable, or an accompaniment to go with a starch or vegetable.
Q: Does that mean vegan recipes?
A: I follow the McDougall Plan for weight-loss and health. At this point in my journey, I am not vegan for ethical reasons. If you are, well, then, you're a much better person than I am. Please be kind to me if an occasional animal product, like honey, slips into recipes, or I mention something that is not consistent with a vegan lifestyle.
